Chocolate Easter Cake recipe from Allison's Cakes 20 Mar

Ingredients
8oz margarine
8oz caster sugar
4 medium eggs
2oz cocoa powder
6oz self-raising flour
Icing
8oz margarine
4oz cocoa powder
10oz icing sugar
4 bags mini eggs
20g dark chocolate for drizzle
Method
Heat your oven to Gas 4/180°c, and grease and line two 8" tins.
Cream together the margarine and sugar until light and fluffy, then add the eggs and whisk thoroughly. Add the cocoa powder and flour and mix until just combined.
Divide between the two tins and bake for 25 - 30 minutes. It’s done when you can place your finger on the centre of the sponge and it springs back. Turn the cakes out, cover and leave to cool.
Meanwhile, make the chocolate buttercream by mixing the margarine, cocoa powder and icing together until creamy.
When the cakes are cool, spread some of the buttercream in between and onto the sides of the cakes until covered.
Put the rest of the icing into a piping bag with a nozzle of your choice and pipe swirls onto the side of the cake.
Smash up the mini eggs in a strong bag using a rolling pin (but keep some aside for the decoration on top!) Using the palm of your hand press the crushed eggs into the side of the cake, and put the rest on the top.
Melt the dark chocolate slowly in the microwave and drizzle over the cake using a spoon.
