Easter Biscuits
Ingredients:
200g unsalted butter (at room temperature)
150g caster sugar
2 large egg yolks
400g plain flour
1 tsp cinnamon
1 tsp mixed spice
Method:
Preheat oven to 180°C/gas mark 4
Line two baking trays with baking paper
Cream together the butter and sugar.
Beat in the egg yolk.
Sieve the flour and spices together and work into the mix – take care not to overwork the dough.
Divide the dough into two pieces, wrap one in clingfilm and put into the fridge.
Roll out the dough and cut into shapes with cookie cutters. You can squeeze the trimming back together and roll out again to get more biscuits.
Repeat with the other piece of dough.
Place biscuits onto baking tray and bake in the middle of the oven for 10-15 minutes. When they are done, they should be a light golden colour.
When done, take them out and put on a cooling rack.
When they are cool, you can decorate them as you like.
